High Five for Friday

I don't know what's been up with me lately but I am sooo tired! We have had rainy gloomy weather all week. Nothing like a lack of sunshine to take all of your energy. That's why I'm thankful it's FRIDAY and this weekend is supposed to be sunny. I have lots on my "to do" list but, first I get to share a few highlights from the last week.

My beautiful baby sister's 33rd birthday. Boy, that makes me feel old! It's crazy how fast time goes by. It seems like just yesterday we were singing Belinda Carlisle songs and making up dances to Tiffany. Oh the good old days!

My new badge reel holder by Poppy and Pippa. I never wear "flair" per se but, this is just enough to add a little something.

My Revlon "Chic" nail polish.

Green skinny jeans!! I finally found a pair of skinny jeans that fit great and were only $19.99 at TJ Maxx. The pair pictured are not the actual jeans I purchased - they are some off brand that I can't remember the name of...

I Need Your Help!

I recently organized my office at work and need some help from you to finish it! Yes, I do have offices on my mind lately as you probably noticed from my dream home office post yesterday.  I am happy with how everything is organized and how clean and fresh it looks. There is one problem. Everyone keeps asking me if I'm moving out!! I guess I had a lot of clutter before. The entire office is complete except for the space above my desk (see below) and a blank wall off to the right.  I have an office the size of a closet and no natural light so I need something simple and possibly bright or light colored.

I need some ideas for the top of my desk. The wall is a lovely painted brick (blech). What would add to the space without making it look cluttered? And yes, that is the actual width of my closet office.



Here is what I have in mind for the wall off to the right. I would like to purchase the wood plaques from Hobby Lobby or Michaels, paint them, and then attach some sort of clip at the top to hold pictures. The clip will make it easy to switch out pictures - either of the kids or of drawings/artwork.

Home Office Space
The more time I spend hauling all of my Poppy and Pippa stuff out to the kitchen table the more I want a beautiful organized space - just for me. Right now all of my items for creating are either located in our spare bedroom or in the storage closet across the hall. I would love to fill the spare room with beautiful inspirational items so I can gaze upon them as I work. One problem. Whidbey. I can't have anything out because he thinks everything is a toy. So, for now I will dream...

This is such a clever idea. A wine rack with large cups. I would store all of the different clips and elastics so they would be conveniently at my fingertips. (This would not currently work - you know, with Whidbey thinking everything is his to play with.)

Super Easy Enchiladas

I am not a cook. I do not even enjoy cooking. My husband usually does all of the cooking. Yes, I know how lucky I am :) Here is a super easy recipe for enchiladas.

You will need the following:
Rotisserie Chicken
A can of Black Beans
A can of diced tomatoes 
We don't add the tomatoes. If you do you add them at the same time as the beans and corn.
A 15 oz. Can of Enchilada Sauce
(they were out of the 15 oz. so we got two smaller cans)
A can of Mexi-Corn
3 Teaspoons Cumin
Shredded Cheese - We like the three-cheese blend
Tortillas
Sour Cream
Black Olives
Shredded lettuce
Green Onions

1. Remove the meat from the chicken then shred - you need 2 cups but, I use the entire chicken.

2. Drain and rinse the black beans - add to shredded chicken

3. Drain corn - add to beans and chicken

4. Add 3/4 Cup of the enchilada sauce and 2 teaspoons Cumin to the corn, beans, and shredded chicken

5. Stir ingredients and add a little hot sauce for some added spice

6. Scoop a bit of the mixture onto a tortilla, sprinkle cheese and then roll it up.

7. Grease a 9 X 13 pan. Place a single layer of enchiladas on the bottom.

8. Pour remaining enchilada sauce into a small bowl, add remaining teaspoon of Cumin and stir. Then pour over the entire pan.

9. Sprinkle remaining cheese on top. As you can see from mine - Bill has less cheese than me. 

10. Bake for 20 to 25 minutes at 375. Let it sit for a bit before serving. Add sour cream, black olives, green onions and shredded lettuce as you wish.

Monday Modge Podge

Hunger Games.
Didn't go see it. I'm probably the only one. Oh well, it won't be so squishy sitting next to someone I don't know when we go...in a week or two. I don't know what it is about big movies but, Bill and I always wait at least two weeks (or more) before going. I am a huge Harry Potter fan and we waited a month before seeing each one. I have the belief that although I'm excited to see a movie, once I have there's no going back to that first time seeing it. Once you've seen it the excitement is gone. I like to make it last.

Family.
Busy, busy weekend with family! Saturday we celebrated my sister's birthday (that's actually on Thursday) with my Mom and Dad. We went for pizza and had ice cream cake. She has three kids so it had to be kid friendly. It was a really good time. My nephew told me all about Hunger Games. We read the book at the same time - he's 10 and I'm 35. Then on Sunday we went to Bill's parents house for lunch because his brother and two of our nephews were in town. We don't see them very often so it was nice to spend a sunny afternoon with them.


Great Deals.
I was recently a part of a focus group and made an easy $75 to spend on Spring clothes. I was quite the bargain shopper. I went to TJ Maxx. I haven't been super lucky with their clothes in the past but, I found some great things. I found a pair of COLORED JEANS for $19.99 and I also got two tops! I spent the remainder $20 on ribbon for Poppy and Pippa. Then I found a pair of black skinny pants at Eddie Bauer for $15! Went a little over my budget but, I thought I really shouldn't count the ribbon. :)

Not so... High Five for Friday

Ok, so instead of High Five for Friday I'm in more of a Not Feelin' It Friday mood. In other words. I'm kind of over-stressed and burned out. Having the job I do as the Director of an Early Childhood Center is tough because not many people know what I actually do besides sit at a desk in my office. This week has been draining to say the least. There is a lot of "behind the scenes" stuff that is wearing me out! I love my job and wouldn't trade it for anything. I think we all get to this point once in a while. So, I apologize because today my brain has no room for remembering any of the highlights of this last week for my usual High Five for Friday post. Sorry.

So, I'll leave you with this.

Even the fashion world is getting involved...
Levi's is encouraging everyone to wash their jeans in cold water only about every two weeks. Levi's began making Water<Less Jeans a couple of years ago using 28% less water. They claim that if each of the 13 million pairs sold were washed only every 14 days it would save 14 years of drinking water for 60,000 people! That's crazy! Read more about what water conscious fashion companies are doing in yesterday's LA Times.

What are you going to do...
not only today but, tomorrow, and the next day and the day after that...
Can you give up water in one area of your life? Will you wear your jeans for 14 days with no washing in between? (I am!) Will you turn off the water while brushing your teeth? (Yup, doing that too.) Take a shorter shower - wash your hair every other day? (Already do that.) Will you choose to eat more grain based foods and forgo meats? (Working on this one.) Whatever you do do something. And spread the word.
